Enjoy this not-too-sweet but very yummy and healthy apple crisp!
Serves: 6. Preparation time: 30 minutes
8-10 tart apples (like Granny Smith), washed, peeled, cored and diced
2/3 cup fresh squeezed orange juice
Juice of ½ large lemon (about ¼ cup)
1/2 cup granulated sugar (or something like truvia)
½ cup whole wheat flour (or gluten free flour)
2/3 cup rolled oats
2/3 cup nuts (walnuts, pecans or almonds), chopped
¼ tsp ground cardamom
1 tsp cinnamon
Pinch of coriander
5 tbsp softened butter
1. Preheat oven to 350 degrees.
2. In a medium bowl, combine apples, orange juice and lemon juice and spread evenly in a baking dish (like a glass lasagna pan).
3. In a separate bowl, combine sugar, flour, oats, nuts, cardamom, cinnamon, and coriander. With your hands, work softened butter into the dry ingredients until evenly combined into small crumbs. Sprinkle the crumbs on top of the apples.
4. Bake uncovered for 30-35 minutes.
