Healthy Chicken Chili 

This healthy chicken chili is chock full of extra veggies for a great nutrition boost!



1 ½ lbs chicken breasts cut in small cubes

½ large onion, chopped

4 cloves garlic, minced

4 large carrots, sliced

3 celery stalks, sliced

2 tsp. olive oil

4 14.5oz boxes organic chicken broth

1 cup cauliflower

2 cups kale, chopped

6 cups of home cooked beans or:

2 16oz cans navy or great northern beans

1 16oz can chickpeas (garbanzo beans)

1 16oz can white corn (or 2 cups frozen sweet corn)

2 cups cooked mixed rice (brown and wild, e.g.) - cook as per directions and then add

4 cans (4-oz cans) green chilies

Season with

4 tsp ground cumin

1/4 tsp hot pepper sauce (or 2-3 Tbsp chopped jalapeno peppers)



1.     Saute chicken cubes, onion, garlic, carrots and celery in olive oil over medium heat until golden, about 5 minutes

2.     Add chicken broth and bring to a boil

3.     Add cauliflower and kale and cook 10 minutes

4.     Add beans, corn, rice, green chilies, cumin and pepper sauce/peppers

5.     Cover and simmer 20 more minutes
