Healthy Gazpacho

Try this yummy blended healthy gazpacho - you will be amazed at how easy it is and how good and fresh it tastes!


2 medium carrots

2 medium celery stalks

1 large vine ripened tomato

½ medium cucumber

½ cup red onion

¼ medium jalapeno (about 1 Tbsp)

2 cloves garlic

2 cups tomato juice

Juice of 1 lime

1/3 tsp cumin

¼ tsp black pepper



1.        If you have a heavy duty blender (like a Vitamix or Ninja), no need to cut any ingredients up; otherwise cut ingredients into chunks before adding to blender or food processor.

2.       Add tomato juice first, then all other ingredients except avocado.  If you like it smooth, blend well.  Blend less if you want it chunkier.  Add more tomato juice if it is too thick.

3.       Most like it chilled (about 2 hours), but you can eat it right away if you like.

4.       Garnish with chopped avocado and serve. 


Note:  Can also blend the avocado in the soup (tasty, though it will be green!)
