Enjoy this warm, hearty Kale and Bean Soup!
1. In a large soup pot, heat oil.
2. Add garlic, onion, carrots and celery. Saute until the onion is transparent.
3. Add broth, kale, bay leaves, tomatoes, Italian seasoning and pepper.
4. Simmer ½ hour.
5. Add tofu and beans and heat another 10 minutes.
Note: you can reserve 1 cup broth and 1 can of beans, mix in blender or food processor until smooth and add for a thicker broth.
