Enjoy this yummy pumpkin bread - a perfect holiday recipe for Thanksgiving or Christmas!
• 4 eggs
• 2 cups of agave nectar or honey
• 2 cups of pumpkin puree
• 1 cup canola oil
• 2/3 cup of water
• 1-2 mashed ripe bananas (1 cup)
• 1 cup pecans or walnuts
• 3 ½ cups of whole wheat flour
• 2 tsp baking soda
• 1 tsp ground cinnamon
• 1 tsp nutmeg
Preheat the oven to 350 degrees. In a large bowl, beat the eggs and add the agave nectar (or honey), pumpkin, oil, water and bananas. Blend well.
In a separate bowl, mix flour, nuts, baking soda and spices.
Pour the dry mixture into the wet mixture and blend thoroughly. Pour it all into two 9 by 5 inch loaf pans coated with nonstick spray.
Bake for 1 hour and 10 minutes.
